Fusion Coconut Chicken is a very popular dish in my kitchen. It is a combo of Thai and Indian cuisine. This is a family favorite or rather "hubby favorite"! It is a very simple, yet tasty recipe; quick and easy try for even a new cook. If you have people coming over all of a sudden, or had a busy day and do not feel like spending too much time in the kitchen and yet want some gourmet dinner, this is your dish!
Ingredients:
1 lb chicken breast cut into cubes (preferably small)
Onions 1 cup (finely chopped or semi blended)
Garlic 1 tsp (finely chopped/paste)
Ginger paste 1tsp
Cayenne Pepper (ground) 1 tsp (also known as red chilli powder)
Black Pepper (ground) 1 tsp
Cumin powder 1 tsp
Paprika (ground) 1 tsp
Accent salt 1/2 tsp
Lawry's seasoned salt 1 tbsp (or to taste)
Thai kitchen unsweetened coconut milk 1 can (approx. 14 fl oz or 403 ml)
Hunt's diced tomato (in basil, garlic and oregano) 1 can (approx. 14.5 fl oz or 411 g)
Sweet peas 12 fl oz or 340 g
Cooking oil 1/2 cup
